Mediterranean Chicken Recipe from Jo’s Kitchen

Ingredients
- 4 skinless chicken breasts
- 4 courgettes
- 2 tins chopped tomatoes
- tomato puree
- garlic puree
- 1 large onion
- runny honey
- olive oil
- plain flour
- salt and pepper
- crème fraiche
METHOD
- Coat the chicken in seasoned flour
- Pan fry in oil until lightly browned on both sides
- Place in a baking dish and drizzle with honey
- Chop the onion and sauté with the garlic in oil until golden
- Add the diced courgette and cook until soft
- Add the tomatoes and tomato puree, bring to the boil
- Pour over the chicken
- Bake at 180˚ C for about 30 mins
- Serve with the crème fraiche
