Clootie Dumpling Recipe by Mike Scott Broadcast Date: 5th February 2015
2 cups sugar
1 cup breadcrumbs
1 cup Atora suet
1/2 pint milk
1 tsp mixed spice
2 tbsp. treacle
1 grated apple
1 lb self-raising flour
1 lb sultanas
1/2 cup currants
Mix everything together well, tie in a sealed floured cloth and boil for 3.5 to 4 hours.
After removing cloth, place in oven 10-15 mins to dry off.
N.B. While boiling, always make sure there is enough water in the pan almost to cover the dumpling.
